Sisig is a delightful symphony of flavors and textures, often made from pig’s head parts (ears, chicks) chicken liver, and pork belly, seasoned to perfection with calamansi, chili peppers, onions and sizzled on a hot plate. Growing up in Pampanga, I had the privilege of tasting this authentic dish prepared by my father at family gatherings. This dish is more than just food, it’s an experience, a tradition. Each bite carries the legacy of generations who have perfected this dish over the years, creating a beloved staple in Filipino cuisine.
