Kare-Kare: A Taste of Kapampangan Tradition

Pampanga, known as the Culinary Capital of the Philippines, is home to some of the most well-loved dishes in the country. Rich in flavor, heartwarming, and carefully prepared, these dishes reflect a deep-rooted culture that values both taste and heritage.  This month, I’m proud to feature Kare-Kare as our Kapampangan Dish of the Month. It’s a timeless recipe that continues to comfort, connect, and celebrate generations of families. Whether you're enjoying it in a local restaurant or making it from scratch at home, each spoonful delivers flavor, history, and heart. 

The Kare-Kare We Grew Up With 

Kare-Kare is a luscious stew made with a peanut-based sauce, often featuring oxtail, tripe, and a mix of vegetables such as banana blossoms, string beans, and eggplant. What makes it special is the sauce, a smooth, thick blend of ground peanuts, toasted rice, and annatto, simmered until perfectly creamy. 

To complete the experience, it’s always served with bagoong, Pampanga’s signature fermented shrimp paste which provides a savory, salty contrast that enhances every bite. 

A Dish Full of Memories 

In Pampanga, Kare-Kare has always been more than just food, it’s a cherished part of family tradition. I remember watching my grandmother carefully prepare the stew, grinding rice by hand and gently stirring the pot with care and patience. It wasn’t something made in a rush. Kare-Kare was saved for special days, Sundays, holidays, and family reunions. 

 The smell of peanut sauce bubbling in the kitchen always meant something special was coming. It brought with it warmth, memories, and the comfort of home-cooked love. 

Why Kare-Kare Deserves a Spot on Your Table 

While Kare-Kare isn’t spicy, its flavor runs deep. It’s hearty, nutty, and soothing. The tender cuts of meat, the rich sauce, the fresh vegetables, and the salty bagoong create a well-balanced and satisfying meal. It’s a crowd-pleaser at fiestas because it brings people together and keeps them coming back for more. 

Kare-Kare also showcases what Kapampangan cooking is all about: time, dedication, and culinary pride.
